Samsara x Mang Koboi: Bogor’s Gastronomy Starts at the Farm
Samsara Bogor and Kandang Domba Mang Koboi bring local lamb into four Indonesian dishes, on the pop-up menu until 31 October 2026.
Every city that wants to be known for its food eventually has to answer where that food comes from, and this October Samsara Bogor answered it by going straight to a local lamb farm.
Through a collaboration with Kandang Domba Mang Koboi, a local lamb farm from Bogor, Samsara Bogor has built a pop-up menu around local lamb cooked with Indonesian spices and traditional techniques, running from 3 October until 31 October 2026 at Samsara on Jl. Jalak Harupat No. 19, Bogor.
A Farm and a Kitchen at the Same Table
The idea behind the collaboration is to bring a local farm and a restaurant together around one ingredient, as a way of showing appreciation for the quality of Indonesian local lamb and for the people who raise it. Samsara sees this as part of Bogor’s journey toward becoming a gastronomy city, where the potential of the region’s livestock and the exploration happening in its kitchens can finally meet on the same table instead of running as two separate stories.
That framing shaped how the menu was built, because every dish starts from lamb raised on a local farm before it reaches the kitchen on Jalak Harupat, and the short distance between farm and kitchen is part of what Samsara wants guests to taste when they sit down.
Opening Day, Cooked in Front of Guests
The collaboration opened on 3 October 2026 with a live cooking session that ran all day at Samsara Bogor, from 09.00 until 22.00 WIB. Guests who came through were met with the aroma of lamb being cooked on the spot, and they got a culinary experience that brought them much closer to the ingredients and the process behind each dish than a regular visit usually allows.
Four Dishes, One Story
The collaboration menu carries four main dishes, each drawing on the depth of Indonesian spices and traditional cooking techniques, starting from Nasi Goreng Domba and Sop Domba and moving on to Tengkleng Domba and Sate Klatak Domba.
All four remain available as a pop-up menu until 31 October 2026, which gives anyone who missed the live cooking session plenty of room to come in and try the collaboration for themselves.
To round out the menu, Samsara has added two pairing drinks, Embun Bogor and Tomat Putih, which sit alongside the lamb dishes for the full run of the pop-up.
A Room for Bogor’s Local Makers
The collaboration with Kandang Domba Mang Koboi follows Symphony of Melody & Taste, the program in which Samsara worked with Bogor visual artist Mahdi Albart, creator of Rubo, the city’s official mascot, and translated his character Lemon into food, drinks and a capsule collection that ran at Samsara until 5 October 2026.
Seen together, the two collaborations show the role Samsara wants to play in Bogor, as a room that keeps opening its doors to the people who give the city its character, whether that person is an artist drawing characters or a local farmer raising lamb.
